Vina San Pedro began in 1865, and this line pays homage to the winery’s founders,
theirvisionary vocation, and their respect for wine.
The concept that gives rise to this linefollows the most basic rule of fine wine production:
seek true varietal expression. To dothat,
each 1865 wine is the product of a single vineyard for the maximum expression ofterroir.
Every precaution is taken to match the variety with the soil type
and vineyardmanagement techniques best suited to its unique needs.

為了向酒廠的創始人致敬也緬懷他們當初對於釀酒事業的堅持,
聖派德羅酒廠特別以 1865 這個酒廠創立的年份為名,設計出一系列的酒款,
並將其定位在「回到最初的釀酒哲學- 探尋每個品種最真實的特質」,
因此 1865 系列每個酒款都來自於單一葡萄園,
針對每一個葡萄園不同的土壤特性、氣候條件與不同品種的特殊需求量身打造各自獨特的耕作技巧。如此用心的經營,只是為了真實地還原 1865 年開始的那一份最簡單的堅持!
Vinification 釀造方式
Cold maceration for 5 days. Alcoholic fermentatio with selected yeasts and at
controlled temperatures between 28 and 29oC. Maceration for 25 to 30 days.
Agedfor 12 months in French (95%) and American (5%) barrels, 50% were new.
冷浸泡 5 天,以特選酵母在攝氏 28-29 度進行酒精發酵,接著再浸泡 25 到30 天。
以 95%法國橡木桶和 5%美國橡木桶熟成 12 個月,50%為新桶。
Tasting Notes 品試摘要Colour: violet with gentle brick tones
色澤:紫色與溫和的磚紅色
Nose: a classic Cabernet Sauvignon, very elegant. Aromas are very intense,
it hasearthy aromas with eucalyptus tones that speak of its origin in the Maipo
Valley. This combines with vanilla and toast notes integrating well with the wine.
香氣:經典的卡貝納蘇維翁紅酒 ! 香味明顯,擁有 Maipo valley 特有的草香,
尤佳利樹等特殊香氣,與香草以及烤吐司的宜人氣息巧妙的結合在一起
Palate: high-bodied wine, with ripe tannins that have evolved through bottle aging.

This wine is made from Viñ a San Pedro’s finest Cabernet Sauvignon grapes in the
Maipo Alto Valley. The vineyards are planted in a region with thin, well-drained, and
rocky alluvial soil.
嚴選來自聖派德羅酒廠 Maipo Alto 河谷的葡萄園中,
最好的卡貝納蘇維翁葡萄,產區的土層薄、排水性佳、屬岩石沖積土。
WINEMAKING PROGRESS 釀造過程
The grapes underwent cold maceration for three days. Then alcoholic fermentation
was carried out with selected yeasts at controlled temperatures between 28 and 29°C.
The cap was pumped over three times a day to keep the skins in contact with the must
and allow for a slow and delicate extraction. 100% of the blend was aged for 12
months in French (95%) and American (5%) oak barrels, of which 50% were first-useand 50% were second-use.
葡萄經低溫泡皮 3 天後,於溫控 28-29°C 的環境中與嚴選酵母進行酒精發酵,
過程中每日 3 次淋皮,增加葡萄皮與葡萄汁接觸的時間,以萃取精緻的單寧。

TASTING NOTES 品飲筆記
Deep and intense ruby red, with purplish tones.
Distinctive varietal characteristics and very intense on the nose, marked by ripe red
fruit flavors such as cherries and plums, together with licorice, black pepper and
spiced notes. Subtle mineral notes blend together with hints of chocolate, coffee and
mocha. The oak is well-integrated, producing a complex and elegant wine.
濃郁的深寶石紅中帶有紫色光暈,充分展現出單一品種的特色,香氣濃郁,
散發成熟的櫻桃和李子等紅色水果香氣,伴隨著甘草、黑胡椒和香料氣息,
淡淡的礦石風味中含有巧克力、咖啡及摩卡香氣,
橡木桶的味道完美地融入葡萄酒,增添優雅的風格與複雜度。
SERVING SUGGESTION 飲用建議
Ideal for accompanying red meat in general, roast meat, marinated meat
and lambstew, as well as strong cheese. Serve preferably at 17 to 18°C.
適合搭配紅肉及各式燒烤肉類、醃漬過的肉類及燉羊肉,以及濃郁的起司類,
試飲溫度為 17-18°C。
